做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮山和薏(yì )米。用(yòng )清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上擦一遍(biàn ),放两勺(sháo )油,待油(yóu )六成热下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫(jì )鱼和(hé )其(qí )他材料,武火煮沸,转中小火(huǒ )煲一个(gè )半小时,下盐调味即可品尝(cháng )。 -
