做(zuò )法(fǎ ):春笋切(qiē )成片后加少许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅(guō )烧热,倒入(rù )2勺(sháo )油,放入生(shēng )姜、春笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。 -
