做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净淮(huái )山和薏米。用清水把陈(chén )皮泡软(ruǎn ),拍裂一(yī )小块姜,热锅(guō ),用姜块在锅上擦一遍,放两勺油(yóu ),待油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放(fàng )入煎煮(zhǔ )好的鲫(jì )鱼和其他(tā )材料,武(wǔ )火(huǒ )煮沸,转中小火煲一个(gè )半(bàn )小时,下(xià )盐调味即可品尝。 -
