做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈皮泡软,拍(pāi )裂一小块姜,热(rè )锅,用姜块在锅上擦一遍,放两勺油,待油六成(chéng )热下(xià )鱼(yú ),煎(jiān )至微黄(huáng )。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其(qí )他材料,武(wǔ )火煮沸,转(zhuǎn )中(zhōng )小火煲(bāo )一个(gè )半小时(shí ),下盐调味即可品尝。 -
