做法(fǎ ):洗(xǐ )净宰好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用(yòng )清水(shuǐ )把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块(kuài )在锅上擦一遍,放两勺(sháo )油(yóu ),待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清(qīng )水,放(fàng )入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小时,下盐调味即可品尝。 -
