做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈(chén )皮泡软(ruǎn ),拍(pāi )裂一小(xiǎo )块姜,热锅,用姜块在锅上擦一遍,放(fàng )两勺油,待(dài )油六成热下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和(hé )其他(tā )材(cái )料(liào ),武火煮沸,转中小火煲一个半(bàn )小时,下盐调味即(jí )可品尝。 -
