做(zuò )法:洗净(jìng )宰(zǎi )好鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈(chén )皮泡软,拍(pāi )裂一小块姜,热锅,用(yòng )姜块在锅上擦一遍(biàn ),放两勺油(yóu ),待油六成热下鱼,煎至(zhì )微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫鱼(yú )和其(qí )他(tā )材料,武火煮沸,转中小火煲一(yī )个半小时,下(xià )盐调味即可品(pǐn )尝。 -
