做法(fǎ ):洗净宰(zǎi )好(hǎo )鲫鱼(yú ),洗(xǐ )净(jìng )淮(huái )山和薏(yì )米。用清水把(bǎ )陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成(chéng )热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和其他(tā )材(cái )料,武火煮沸,转中小火煲一个半小时(shí ),下盐调味即可品(pǐn )尝。 -
