做法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮(huái )山和薏米。用清水把陈皮泡软,拍裂一小块姜,热锅,用姜块在锅上擦一遍(biàn ),放(fàng )两勺油,待(dài )油六成热下鱼,煎至微黄。煮沸瓦煲(bāo )里(lǐ )的清水,放入(rù )煎煮好的鲫(jì )鱼(yú )和其(qí )他(tā )材(cái )料,武火(huǒ )煮沸,转中小火煲一个半(bàn )小时,下盐调(diào )味即可品尝。 -
