做(zuò )法:春(chūn )笋切(qiē )成片后加少许盐捞出(chū )后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁时盖上锅(guō )盖焖。 -
