做(zuò )法:春(chūn )笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均匀,加入(rù )少量清水半掩(yǎn )住春笋,盖(gài )上锅(guō )盖大火煮开后转中(zhōng )火(huǒ )。煮到水快(kuài )熬(áo )干的时候(hòu )加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。 -
