做法(fǎ ):春(chūn )笋切成片后(hòu )加(jiā )少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中火。煮到水快熬干的时(shí )候加入(rù )盐(yán ),翻炒均(jun1 )匀稍收汁(zhī )时盖(gài )上锅盖焖。 -
