做(zuò )法:春笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入(rù )生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加(jiā )入(rù )少(shǎo )量(liàng )清水半掩住春笋,盖上锅盖(gài )大火煮开(kāi )后转中(zhōng )火。煮到水快(kuài )熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。 -
