做(zuò )法:春笋切成片后加少(shǎo )许盐(yán )捞出(chū )后用(yòng )清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入(rù )少量(liàng )清水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖(gài )焖。 -
