做法:洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在(zài )锅上擦一遍(biàn ),放两勺油,待(dài )油六(liù )成热下鱼,煎至微黄(huáng )。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火(huǒ )煮沸,转中(zhōng )小火煲一个半小时(shí ),下盐调味即可品尝。 -
