做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两(liǎng )勺(sháo )油,待油六成(chéng )热下鱼,煎至微黄(huáng )。煮沸瓦煲里的清(qīng )水,放入煎(jiān )煮(zhǔ )好的鲫鱼和(hé )其他材料,武火(huǒ )煮沸,转(zhuǎn )中小(xiǎo )火煲(bāo )一个半小(xiǎo )时,下(xià )盐调味(wèi )即可品尝。 -
