做(zuò )法:春笋切(qiē )成片后加少许盐捞出后(hòu )用清水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟左右(yòu )。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上(shàng )锅(guō )盖(gài )焖。 -
