做(zuò )法:春笋切成片后加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入(rù )生抽、老(lǎo )抽(chōu )、蚝(háo )油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。 -
