做(zuò )法:洗净宰好(hǎo )鲫(jì )鱼,洗净淮山和薏米。用清水把陈(chén )皮泡软,拍(pāi )裂一小块姜,热锅,用(yòng )姜块在锅上(shàng )擦一遍,放两(liǎng )勺(sháo )油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水,放(fàng )入煎煮好的鲫(jì )鱼(yú )和其他材料,武火煮沸,转中小火煲一个半(bàn )小时(shí ),下(xià )盐调味即可品尝。 -
