做(zuò )法:洗(xǐ )净宰好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一小块(kuài )姜(jiāng ),热锅(guō ),用姜块在锅上擦一遍,放两勺(sháo )油,待(dài )油六成(chéng )热下(xià )鱼,煎(jiān )至微黄(huáng )。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火(huǒ )煲一个半小时,下(xià )盐调味即可(kě )品尝。 -
