做(zuò )法(fǎ ):洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜块在锅(guō )上擦一(yī )遍(biàn ),放两勺油,待油六成热(rè )下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其他(tā )材料,武火煮沸,转中(zhōng )小火煲一个半小时,下盐(yán )调味即可品(pǐn )尝。 -
