做法:春笋切(qiē )成片后加少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开后转中火(huǒ )。煮到水快熬干(gàn )的(de )时候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。 -
