做(zuò )法:洗净宰好鲫鱼(yú ),洗净淮山和薏(yì )米。用清(qīng )水把陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用姜(jiāng )块在锅上擦一(yī )遍,放(fàng )两勺油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料,武(wǔ )火煮(zhǔ )沸,转中(zhōng )小火煲一个半小时,下盐调味即可品尝。 -
