做(zuò )法:春笋切(qiē )成片(piàn )后加少许盐捞(lāo )出后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上锅(guō )盖(gài )大火煮开后转(zhuǎn )中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均匀稍(shāo )收汁时盖上(shàng )锅盖焖(mèn )。 -
