做法(fǎ ):洗(xǐ )净宰(zǎi )好(hǎo )鲫鱼,洗净淮山和薏米。用清水把(bǎ )陈皮泡软,拍裂一小(xiǎo )块姜,热锅,用(yòng )姜(jiāng )块在(zài )锅上擦一遍,放两勺油(yóu ),待油六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮好(hǎo )的鲫鱼和(hé )其他(tā )材料,武火煮沸,转(zhuǎn )中小火煲一个半小时,下盐调味即可(kě )品尝。 -
