做(zuò )法:春笋切成片后加少许(xǔ )盐捞出后用清(qīng )水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛(niú )肉片(piàn )、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀(yún )稍(shāo )收汁时盖上锅盖焖(mèn )。 -
