做(zuò )法:洗(xǐ )净宰好鲫鱼,洗(xǐ )净(jìng )淮山和薏米。用清水(shuǐ )把陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜块(kuài )在锅上(shàng )擦一遍,放(fàng )两勺油,待油六成热(rè )下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦(wǎ )煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小(xiǎo )时,下盐调味即可(kě )品尝。 -
