做(zuò )法(fǎ ):洗净宰好鲫鱼(yú ),洗净淮山和薏米。用清(qīng )水把陈皮泡软,拍裂一小块姜,热锅(guō ),用姜块在锅上擦(cā )一遍(biàn ),放两勺油,待油六(liù )成热下鱼,煎(jiān )至微黄。煮沸(fèi )瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其(qí )他材(cái )料(liào ),武火煮沸,转中(zhōng )小(xiǎo )火煲一个半小(xiǎo )时(shí ),下盐调味即可品尝。 -
