做(zuò )法:春笋切成片后(hòu )加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切(qiē )片(piàn ),葱切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上(shàng )锅盖(gài )焖。 -
