做(zuò )法:洗(xǐ )净宰(zǎi )好鲫(jì )鱼(yú ),洗净淮山(shān )和薏米。用清(qīng )水把陈皮泡软,拍裂一小(xiǎo )块姜(jiāng ),热锅,用姜块在锅上(shàng )擦(cā )一遍,放两勺(sháo )油,待(dài )油六成热下(xià )鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材(cái )料,武火煮沸,转中小火煲一个半小时,下盐调味(wèi )即可品尝。 -
