做(zuò )法(fǎ ):春(chūn )笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生(shēng )抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干的时候加入盐(yán ),翻(fān )炒均匀(yún )稍收汁(zhī )时盖上(shàng )锅盖焖。 -
