做(zuò )法:春笋切成片后加少许盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入(rù )生姜、春笋(sǔn )、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加入(rù )生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁时盖上锅盖焖。 -
