做法(fǎ ):洗净宰好鲫鱼,洗净淮山(shān )和薏(yì )米(mǐ )。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用(yòng )姜块在(zài )锅(guō )上擦(cā )一遍,放两勺(sháo )油,待油六成热下鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半(bàn )小时(shí ),下盐调(diào )味即可品尝。 -
