做(zuò )法:春(chūn )笋切成片(piàn )后加少许盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻(fān )炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽(chōu )、蚝油(yóu )翻炒(chǎo )均匀,加入(rù )少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。 -
