做(zuò )法:洗(xǐ )净宰(zǎi )好鲫鱼,洗净(jìng )淮山和薏(yì )米。用清水把陈皮泡软,拍(pāi )裂一小块(kuài )姜,热锅,用姜块在锅上擦(cā )一遍,放两勺油,待油六成热下鱼,煎至(zhì )微黄。煮沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其他(tā )材(cái )料,武火煮(zhǔ )沸,转中小(xiǎo )火煲(bāo )一个半小时(shí ),下盐调味即可品尝。 -
