做法(fǎ ):洗(xǐ )净(jìng )宰好鲫鱼,洗净淮山和薏米。用清水把陈(chén )皮(pí )泡软,拍裂(liè )一小块姜,热锅,用姜块在(zài )锅(guō )上擦(cā )一(yī )遍,放两(liǎng )勺油,待油六成热下鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和其(qí )他材(cái )料,武火煮沸,转(zhuǎn )中小火煲一个半(bàn )小(xiǎo )时,下盐调味即可(kě )品尝。 -
