做(zuò )法:洗净(jìng )宰好鲫鱼,洗净淮山和薏米。用清(qīng )水把陈皮(pí )泡软(ruǎn ),拍裂一小(xiǎo )块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成热下鱼,煎(jiān )至(zhì )微黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好(hǎo )的鲫鱼和其(qí )他材料,武火(huǒ )煮(zhǔ )沸,转(zhuǎn )中小火煲一(yī )个半小时,下(xià )盐调味即可品尝。 -
