做法:洗净(jìng )宰好(hǎo )鲫鱼,洗净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍(pāi )裂一小块姜,热(rè )锅(guō ),用姜块在锅上(shàng )擦一遍(biàn ),放(fàng )两勺(sháo )油,待油六成热下鱼(yú ),煎至微黄(huáng )。煮沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮好(hǎo )的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半小时,下盐调(diào )味即可品尝。 -
