做(zuò )法(fǎ ):洗(xǐ )净宰好鲫鱼,洗净淮山(shān )和(hé )薏米。用清水把陈皮泡软,拍裂一小块姜,热(rè )锅,用姜块在锅上(shàng )擦一遍,放两勺(sháo )油,待油六成热下鱼,煎(jiān )至(zhì )微(wēi )黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫鱼和其他材料,武火煮沸,转中小火煲一个半小(xiǎo )时(shí ),下盐调味(wèi )即(jí )可品尝。 -
