做法(fǎ ):洗净宰好鲫(jì )鱼,洗(xǐ )净淮山(shān )和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅(guō ),用姜块在(zài )锅上擦一遍,放(fàng )两勺油,待油(yóu )六成热下鱼,煎至微黄(huáng )。煮沸瓦煲(bāo )里的清水(shuǐ ),放入煎煮好的鲫鱼和其(qí )他材料,武火煮沸,转(zhuǎn )中(zhōng )小(xiǎo )火煲一个半小时,下盐调味即可品尝。 -
