做(zuò )法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加入少量清水半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开后转中(zhōng )火。煮到水(shuǐ )快(kuài )熬(áo )干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。 -
