做(zuò )法:春笋(sǔn )切成片后加少许(xǔ )盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生(shēng )姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖焖。 -
