做(zuò )法(fǎ ):洗净宰好鲫鱼,洗净(jìng )淮山(shān )和薏米。用清水把(bǎ )陈皮泡软,拍裂一小块姜,热锅(guō ),用姜块(kuài )在锅上擦一遍,放两勺(sháo )油,待油六成热下鱼,煎至微(wēi )黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其(qí )他材料,武火煮沸,转中小火(huǒ )煲一(yī )个半(bàn )小时(shí ),下盐调味即可品尝。 -
