做法(fǎ ):洗(xǐ )净宰(zǎi )好鲫鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂(liè )一小(xiǎo )块姜,热锅,用(yòng )姜块在(zài )锅上擦一遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和其(qí )他材料,武(wǔ )火(huǒ )煮沸,转中(zhōng )小火煲一个半小时(shí ),下盐调味即(jí )可品尝。 -
