做法:洗净宰好鲫鱼,洗(xǐ )净淮(huái )山和薏米。用清水把陈(chén )皮泡软,拍裂一小块姜,热锅(guō ),用姜块在锅上(shàng )擦一(yī )遍,放两勺油,待(dài )油六成(chéng )热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水(shuǐ ),放入(rù )煎煮(zhǔ )好的鲫鱼和(hé )其(qí )他材(cái )料,武火(huǒ )煮沸,转中小火煲一个(gè )半小时,下盐调味即可品尝。 -
