做(zuò )法:洗(xǐ )净宰好鲫鱼,洗(xǐ )净淮山和薏(yì )米。用清水把陈皮泡软,拍裂一小块姜,热锅,用(yòng )姜块在锅上擦一遍,放两勺油,待油六成热下鱼(yú ),煎至(zhì )微(wēi )黄。煮沸(fèi )瓦煲里的清水,放入煎(jiān )煮好(hǎo )的(de )鲫鱼和其(qí )他材(cái )料,武火煮沸,转中小(xiǎo )火煲一个(gè )半小时(shí ),下盐调味即可(kě )品尝。 -
